Chef Michela Calicchio cooks with heart the traditional recipes of the family culinary art of southern Italy. This fiery Neapolitan woman imbues the place with her colorful personality and passionately orchestrates a cuisine full of generosity of which the sensory memories of his childhood in Italy are the main ingredient.
She is particularly keen to perpetuate the tradition of fresh handmade pasta. A patient and rare artisanal work that no mechanical process can match or even reproduce for some of this pasta. To accompany her in the kitchen, two passionate young cooks who share with her a love for this unique know-how passed down through the generations in traditional Italian families.
Fusilli, cappelletti, tagliatelle, tagliolini, tortelli, tortelloni, ravioli, lasagna ... each dough of pasta fresca is shaped by hand one by one. This manual preparation makes it possible to aerate the dough much more than a machine would do and provides an inimitable very digestible texture, both firm and melting.
